The grapes are checked throughout August, in order to choose the right day to harvest. Once harvested, the grapes undergo a skin-contact maceration to extract some colour from the skin. Then, the juice, is collected after a delicate pressing and fermented at a low temperature in stainless steel.This is a dry pale pink rosé, similar in style to a provence rosé. Soft red berry fruits, strawberry and raspberry flavours are supported by deliciously fresh acidity. Tapenade or a salade Niçoise, a paella or grilled chicken, fish or lamb with herbs are the perfect pairings.
