Who/What/How:
- Bedoba, (which translates to 'Day of Luck'), dates back the 1737. Vines are an anverage of 30 years old, with a focus primarily on indigenous grape varieties such as the Saperavi which have been sourced from the micro-zones of Kindzmarauli and Kvareli in the broader Kakheti region.
Taste:
- For the Bedoba Saperavi, all grapes were hand-harvested. 7% remain as whole bunches to undergo fermentation in amphora. The remaining portion is fermented in stainless steel tanks for six weeks, before being transferred to a mix of stainless steel, 5000 litre wooden vats, American oak barrels. The end result is a dark purple liquid exuding both spicy and savoury aromas, before giving way to notes of plum, blackberry, herbs, violets and black pepper. Rich, ripe and absolutely delicious.
