Who/What/How:
- Ca’ Bianca winery has been making exquisite wines in the Piedmont area since 1952. The headquarters are now in Cascina Spagna, (a farmstead acquired in the 1980s). The farmstead sits atop a large hill and can be seen by all those who pass it, in the valley beneath.
Taste:
- Vineyard location is key for the Vinicola Ca' Bianca Gavi. The flavour of the grapes are enhanced by salty sea splashes and a mineral rich soil. This provides both a saline character, as well as a defined minerality, which builds texture on the palate. While 220 metres of altitude, soft pressing and cold fermentation preserves a palpable freshness and intense fruit flavours of melon, pink grapefruit, nectarine and peach.
