- The Wildeberg Wines farm sits in the shadow of a mountain, in an area that has been producing wine for 350 years. They are always experimenting with classic South African grape varieties. Different ageing processes and wild ferments look to produce unique styles of South African staples.
Taste:
- Here, we have a 20% skin-fermented wine. This helps to provide just a touch more body and certainly more complexity. Then, from the remaining 80% of the grapes - 40% is picked early for acidity and freshness, the other 40% is picked later and aged in large oak barrels to add complexity and some texture. The power of blending is evident in this creation, as it has paid dividends and led to a perfectly balanced and complex wine. The most prominent flavours include citrus zest, golden pear, white grapefruit and candied lime.
