Who/What/How:
- Kaiken Winery comes from legendary Chilean winemaker Aurelio Montes. After much exploration, he settled on the now site of the Kaiken Winery as the place for his vivifying vino-based journey into the world of Argentinian wine. He clearly new what he was up to as Kaiken was named ‘New World Producer of the Year’ by the Sommelier Wine Awards in 2024. The ‘Disobedience’ line is a collaboration with famed Argentinian Chef Francis Mallmann, who featured on Netflix’s Chef Table.
Taste:
- 30% of the Kaiken Disobedience was aged in French first-use barrels which really comes through in powerful spiced aromas. The remaining 70% is also aged in used oak barrels for 15 months helping to soften tannins. Lastly, the wine is aged in bottle for 6 months prior to release. The end result is a truly exceptional and complex wine packed with spicy, herbaceous and ripe red and black fruit flavours that linger in a persistent finish.
